~phyllo pudding cups~

For Christmas 2008, I was told to make a dessert for the church feast. I didn't want to do the same old sugar cookies or cupcakes. So when I went to the grocery store, I was searching for what I could make. I went to the frozen foods section and started looking and thinking hard about what to bake. I saw to my right little phyllo cups. They were shining like little golden rays of sunshine!! Perfect I thought!!! I pulled two packages of them out of the freezer and looked at the back of them. One of the suggestions they gave to fill them with was pudding. Genius!! So I grabbed two different kinds of pudding, some whipped cream, and some mini chocolate and Reese's chips. To my surprise, people actually liked them!! Even I liked them haha =)

2 packages frozen phyllo cups
3 pudding cups chocolate pudding
3 pudding cups butterscotch pudding
1 can whipped cream
Chocolate and Reese's chips

Thaw the phyllo cups in the refrigerator a few hours before use.
Fill one package of the cups with one lg. spoonful of chocolate pudding and one package with butterscotch.
Put one sm. dollop of whipped cream on top of each spoonful of pudding.
Sprinkle 4-5 chips on the very top of each phyllo cup.

My First Recipe

Hey Everyone. So I'm finally going to post my first recipe. This came to me one day, probably last year or the year before, when we didn't have much to eat in the house. At heart, I'm a pasta, butter, and onion lover =) And thats what we had in the house. So I threw a few things together and presto!!! I made culinary magic... I shared it with my mom and she loved it too. So below is the recipe. Twerk it if you need to. I won't mind ;-)

1 box bow tie pasta
3 Tablespoons butter
3 Tablespoons EVOO (extra virgin olive oil)
1/2 an onion, chopped
1 sm. garlic clove, chopped
1 sm. palmful basil
1 sm. palmful parsley
1 sm. palmful oregano
1 pinch thyme
1 pinch tarragon
2 grinds pepper
Salt for pasta water (optional)
Parmesan cheese (optional)

Cook pasta according to box.
In skillet, melt EVOO and butter on medium heat.
Stir in onions and garlic until onions are slightly translucent.
Add herbs and pepper, lower heat to medium low, and stir.
Drain pasta and put in bowl.
Pour herb mixture on top and stir gently.
Sprinkle cheese on pasta if desired.

fun facts about me!

Hi I'm Amanda Claire Carroll. I'm 16. My hair is named Dela Fu. Random I know. I live in Lithonia, Ga and go to a small private church school in Atlanta. I have one older sister who is surprisingly nice to me! I'm addicted to my phone, texting specifically. I love my friends; they keep me sane, most of the time :-) My family is the shizz too. I love shopping, hanging with friends, going for walks, guitar hero!, cooking, and many more things. The main purpose of my blogs is going to be to share with you recipes. Not just any recipes though. Recipes I created!! Although, I will also be sharing some of my favorite old time recipes and telling the stories that go with them. Well, first blog done peepz...
